Answers: Sony hold no plans at the moment to release the 80GB model in PAL regions (UK & Europe). They are individual available in Japan, Korea and North America.
The 60GB Model have also been discontinued, so you will be unqualified to purchase one in a shop, you inevitability to look on ebay/Amazon for the 60GB.
If its backwards compatibility you want, It may be cheaper buying a 40GB PS3 and a PS2. You can always upgrade the HDD at a subsequent point if needed.
PS. Kevin, you can still use the warranty. My 60GB PS3 had a HDD Failure concluding wednesday. I called Sony and a brand clean 60GB Model was deliver on Friday.
The 60GB has 100% backwards playback. The 60GB is discontinued within the United States and the only piece that I found out that is fruitless about this is that I purchased the 60GB and if I ever enjoy any problems, I can't use the store warranty to trade it in for another 60GB. If you want the 100% Backwards Playback, next you should go for the 60GB. The 80GB doesn't hold that great of Playback, but you can store so much more on it. I would go for the 60GB, but that's only just because I already did and love it.

BTW, NTSC 80GB and PAL 60GB have like peas in a pod backwards compatibility. They both have PS2's GPU (Graphics Synthesizer), but (unlike NTSC 20GB and 60GB) they don't enjoy PS2's CPU (Emotion Engine).
