Answers: You should simply see a slight difference between 1080i at 60i frames a second vs. the 1080p at 30p frames a second. (frankly I have to look totally hard to see a difference).
The Best resolution for that set up will be over component one and only. Make sure the player you get will allow that resolution over component. Denon comes to mind as a moral candidate. 1080i out put will dispense you the best image.
Your projector should be out of danger. HD DVD or Blu-ray players will all "downres" to 720p or 1080i so you can definitely "screen glorious definition DVD".
That said, you won't get relatively the benefit of 1080p (and certainly won't know how to reduce judder by using the 24fps home-grown 1080p signal from the player).
I'm in a similar boat, beside the picture from my 720p projector only looking a bit sharper than DVDs on an HD-A2 HD DVD player. But colour space is enhanced on HD disks so there is some growth to colour, and advanced audio tracks are better than DVDs too.
That said, I personally am sticking next to DVD since I don't see enough enrichment over the already nice picture I get from DVD ... at most minuscule not enough to support the extra cost of HD disks. An additional factor is that immensely few movies, in my prospect, really cry out for HD display. I don't regret my HD-A2 purchase, but I wouldn't miss it either (My Oppo 971 works even better as an upscaler!).
