An optical cable can convey a DD 5.1 signal (covers mono, stereo, and DTS).
The HDMI cable will also carry the exact same background so the sound will be the same from a normal DVD player or HDTV source resembling an antenna, Cable box, Sat Receiver.

The new HD-DVD and BluRay disks can take something called "Un Compressed audio" and enjoy room for some other formats with name like "True HD", etc. I don't have a sneaking suspicion that optical can carry these.
