Answers: Hey Bro. I intern bit time at a recording studio and am study just such things. I would recommend your first two channel be reserved for the kick and snare. Make sure to use the appropriate mic types for respectively. I would recommend another two channels be reserved for overhead condenser mics. These can if truth be told pick up the rest of the kit pretty satisfactorily, depending on how well they're placed. If you hold additional channel to use, you could add another condenser mic on the High Hat. Make sure it's pointed away from the utensils to minimize bleed from the snare and such.
From there, unless you hold a channel and dynamic mic available for respectively of the Toms, I would use remaining channels for the hindmost side of either the snare and/or see. Remember to reverse the phase on any mics which are picking up both sides of any drum.
That's as much expertise as I can muster from my limited exact knowledge on the subject, but hopefully it'll assist a little.
Best of luck...
In plentiful churches drums are loud enough short a mic, but if you amp them, then you should own 6, 7 or more mics. Drum mic's are usually sold in kit, like the one I quotation below.
