When converting a movie or video how do you know what format to use?

And each format have different pros/cons and mpg is the same as mpeg. mpeg2 have a higher compression. Mp4 is other used for ipod videos, PSP, iPhone, etc. AVI and Xvid own a really nice compression with little loss surrounded by quality which could fits for blackberry and zune.
