How record and plackback are done for Audio and Video contained by DVDs?

In DVDs, whether the Audio recording and plackback are surrounded by simple Stereo and electronically synthesis it for 2.1 / 5.1 / 7.1 sound playback or the soundtrack itself is in multi track?

Similarly for Video, whether the CD is simple Video as in VCRs or as S Video / Componenet video signals?

DVDs do allow for multipul video, audio, and subtitle tracks.

DVDs producers almost never use more later one video track, but often enjoy audio tracks for simple stereo, 5.1 and whatever else.
