I have an old "HD capable" TV (Pioneer PRO700HD). The Pioneer site says this TV is 720p / 1080i capable. However when I look on the back of the TV there are only S-Video and component interfaces available. I thought component could only deliver up to 480p. Is that correct? If so, how do I get the TV to actually deliver the higher video quality?

Nope. Component can deliver 480i, 480p, 720p and 1080i. It is just analog HD compared to DVI/HDMI digital HD.
Well you need a source that could output either resolution thru the component video interface.
You either need a ATSC receiver or a HD set top box.
Component cable can do this. IF it's 1080p than you need HDMI.
