You didn't say so, but I'm going to guess that you are using different inputs on the TV for your DVD and your cable box.
Although I am not aware with this selective TV, I know that you can set preferences for each input, and they will hold that setting even though you adaptation to a different input. Under such options, you might own the cable input's color saturation set down to the minimum; hence you will see only black and white.
My HDTV will allow me to set a range of color settings for each input, including sepia and black and white. I suspect your TV have such settings as well.
Go online and see if you can download the Owner's Manual from the Samsung website. It will communicate you how to get into the menu nouns so that you can check this setting for each input picking.
