I have an expensive HDTV and a Virgin Media cable package?

The picture on the TV varies wildly and I am constantly changing the settings to compensate. Anyone else have this problem? I am not subsecribed to any HD channels as yet.

Honest truth - the quality of different channels is variable. You're probably seeing it more because you have a decent TV now.
depends on the source, but also what else you can do is improve youe weak link..the scart cable, if you are using the one virgin gave you, bear in mind it cost pennies to make. Get youeself a better one.
